These recipes are in quantities for serving 50 people or more (used in the kitchen at Twin Oaks Community)

MAIN COURSE: DESSERT:
General Notes:
Although oil is better, margarine can be substituted: 1C Oil = 1/2# Margarine

It’s to mix wet and dry ingredients separately and not to combine them until just
before baking. This is because Baking Soda and Powder are activated by
moisture (powder also by heat).

Water for yeast should be warm to the touch. If the water is too hot to leave your
finger in comfortably, it’s too hot for the yeast.

3t = 1T
4T = 1/4 cup
4c = 1 quart
4qt = 1 gallon
APPLE CRISP
Oven Temp: 350
Baking Time: 45-50 minutes
Bake in: 1 large (2'x3') oiled baking pan
Prep Time: 60-90 minutes (depending on quality of apples)

	10 lbs sliced Apples
	1.5c Oil
	3 C Flour
	7 C Oats
	1 C Sugar
	1 T Cinnamon

Arrange apples in pan.
Combine remaining ingredients and mix until crumbly.
Spread evenly over apples.


VEGAN BROWNIES

Oven Temp: 350
Baking Time: 25-30 minutes
Bake in: 1 large (2'x3') oiled baking pan
Prep Time: 40 minutes

Cook until thick (beating fairly constantly when hot):
	2 C Flour
	6 C Water.
Cool completely. In separate pan Melt (do not boil)
	3 C Oil. Add:
	4 C Cocoa and stir until smooth.
Beat into the cooled flour mixture:
	12 C Sugar
	1 1\2 t  Salt
	2 T Vanilla
Then add cocoa mixture. Mix together:
	12 C Flour
	5 T Powder (Baking)
Add to the above ingredients.
You can add 3 C chopped walnuts or pecans.


VEGAN CARROT CAKE
Oven Temp: 350
Baking Time: 50 minutes
Bake in: 1 large (2'x3') oiled baking pan or 6 bread pan
Prep Time: 40 minutes
	4 C Oil
	8 C brown and/or white Sugar
	6 C Water and/or Soymilk
	16 C Flour (can be all whole wheat)
	3 T Powder (baking)
	3 T Soda (baking)
	2 T Cinnamon
	1 T Allspice
	2 t Salt
	12+ C grated Carrot
	2+ C Raisins
	4 C chopped Nuts (optional)

Mix wet and dry ingredients separately. Combine.
Add carrots, raisins (and nuts). Mix well.
Grated Zucchini can be substituted for Carrot. Cut Cinnamon to 1T, and add ½ T
each Ginger and Nutmeg.


VEGAN BANANA BREAD
Oven Temp: 350
Baking Time: 60 minutes
Bake in: 6 oiled bread pans
Prep Time: 40 minutes

Beat together:
		2 2/3rds C. Oil
		6 C brown and/or white Sugar
Beat in:
		8 C (15-20) Bananas
Mix in:
		1 1\2 C Soymilk or Water
		2 T Vanilla
Mix separately, then Add:
 		16 C Flour
                    1\4 C Powder (baking)
                    4 t Soda (baking)
Add (optional):
		4 C chopped Nuts


CHOCOLATE CAKE (Vegan)
Oven Temp: 350
Baking Time: 45 minutes
Bake in: 1 large (2'x3') oiled baking pan
Prep Time: 30 minutes

Mix:
3 C Oil
10 C Sugar
12 C Soymilk
1/4 C Vanilla

Mix:
15 C Flour
3 T Soda
1/2 T Salt
4 C Cocoa

Combine wet and dry ingrediants

(optional) Frosting:
Simmer: 1.5 C Cocoa & 1 C  Water or Soymilk
Remove from heat; Add: 6 C Powdered Sugar
1/2 C Oil
1/4 C Vanilla


OATMEAL-DATE BARS
Oven Temp: 325
Baking Time: 40 minutes
Bake in: 1 large (2'x3') oiled baking pan
Prep Time: 30 minutes

Briefly Simmer: 5 C Water w/
5 C+ Dates (& Apples)

Mix: 3 C Oil
1.5 C Sugar
8 C Flour
9 C Rolled Oats
3 T Soda

Spread 2/3rds of mix in pan
Then spread on still hot cooked date mixture
Then spread on remaining third of mix



SPLIT PEA SOUP

Cooking Time: soak overnight; cook 1 hour at pressure
Prep Time: 1 hour

16 C Dry Split Peas
10 Bay Leaves
3/8 C Salt
1/4 C Powdered Garlic
1/4 C Dry Mustard
1/4 C Thyme
1/8 C Pepper

Cover peas with water by about two inches.
Some of this cooking water can be tomato juice.
After pressure cooking, continue simmering, and add
grated veggies (carrots, parsnips, zucchini, potatoes, etc).
Shortly before done, add parsley.


CHILI

Cooking Time: soak overnight; cook 1.5 hours at pressure
Prep Time: 1 hour

12 C Pinto Beans
12 C Kidney Beans
1/4 C Cumin
1/8 C Chili Pwdr
1/8 C Oregano
1/8 C Garlic
1/8 C Salt
1/2 T Pepper

Optional : Add Grated Veggies at end
Add 1 C Bulgur
2 Large sauteed Onions

BLACK BEAN CHILI
12C Black Beans
1T of each: Chili Pwdr, Garlic
1/2T of each Cayenne, Cumin, Salt

Soak beans overnight; Drain;
Pressure cook w/spices for one hour adding just enough water/tomato
juice/tomato sauce to cover beans
Add more sauce and grated carrots if desired.
Saute 3 large onions and add to some of beans


QUICHE
Oven Temp: 350
Baking Time: 10 min & 50-60 minutes
Bake in: Ungreased shallow steam table pans (uncovered)
Prep Time: 2 hours
Quantity & Type: 4 pans: (2.5 w/onion, 1/2 no onion, 1 vegan)

Crust for EACH pan:
Mix together in buffalo chopper (w/spinning bowl):
3/4# Margarine
4 C Flour (mostly white)

Transfer into metal bowl and add:
1/2 C Cold Water

Roll out and/or press into pan. Prick w/fork. Prebake.

Filling for EACH pan (for 3 pans in parentheses:) Mix:
1 t (1T) Salt
1/4 t (1t) Pepper
2 (6) dozen Eggs
4 (12) C Milk
Suggested Veggies: Peppers, Carrots, Broccoli, Spinach, Sauted Onions
1-2# (3-6#) Grated Cheese

Fill pan half full w/veggies. Pour in beaten Egg mixture. Sprinkle w/ cheese.

For Vegan Pan, Combine in bowl or buffalo chopper:
	6 C tofu
	1/3 C nut. yeast flakes
	1/3 C flour
	1/3 C oil
	1/3 C lemon juice
	1/2 T garlic pwdr
	1/2 T salt or 2 T soy sauce

Mix w/veggies and spread in pan


POTATO SOUP
Prep Time: 1.5 Hr
Quantity: 4-5 gal.

Clean and peel 10# of potatoes.
Slice into 1/4" thick pieces.
Saute diced onions in 2 five gallon pots.
Add 1/2c flour into EACH pot.
Cook for a couple of minutes without browning.
Add 1gal. water to each pot, potatoes, and other veggies
(celery, cabbage)
Add 2T Thyme, 2T Salt, 1t Pepper, Fresh Chives & Parsley
to EACH pot
Simmer for 40 minutes.
Mash soup.
Add Milk (optional).


GINGERBREAD

Oven Temp: 350
Baking Time: 40 minutes
Bake in: 6 oiled bread pans
Prep Time: 40 minutes

2c. Oil
6c. Molasses
6 Eggs
6c. Orange Juice, or Soymilk or Water with Lemon Juice

SPAGHETTI
5C Lentils
8# Pasta (cook in two pots)
(2) 5-gal pots 1/3-1/2 full of sauce
1/4C Oregano in each pot
1/8C other spices (Thyme, Basil, Garlic, Salt)
Veggies: Carrots, Celery, Onions, Peppers


LASAGNA
Oven Temp: 375
Baking Time: 40
Bake in: 6 Shallow oiled steam table pans
Prep Time: 2 hours
Quantity & Type: 2 meat, 2 plain, 1 vegan, 1 no onion
5+ gallons of sauce w/ 3/4C Oregano, 1/3C Other
5# Noodles (cook in lasagna pan)
2# Ground Beef (cooked)

Put aside 3/4 - 1 gallon of sauce for no onion and then add
4 large sauteed onions

Layers: (use tofu in place of cheese for vegan)
Sauce (use half)
Noodles (6 per layer per pan)
Chopped Spinach & Ricotta or Cottage Cheese (& meat)

Grated Cheese

Sauce

Sauce can be a bit on watery side since noodles will absorb some as they cook.


PIZZA
Oven Temp: 400-450
Baking Time: 8 & 10 min.
Bake in: 24 round pans
Prep Time: 8 hours
Quantity & Type: 12 Veggie (5 plain); 8 Meat; 4 Vegan (1 plain)

Dough: 23oz per pan; Pre-bake
20c Water
1.25c Yeast
3c Sugar
1.5T Salt
2c Oil
55c Flour

Sauce: 3 gallons (2 medium ladels per pizza)

Toppings:
Cheese: 3 gallons grated (2c / pizza)
Hamburger or Sausage: 2/3# / pizza
Soysage: 1 long makes 4+ pizzas
Tempeh: 1/2 rectangle / pizza
Peppers, Onions, Broccoli, Olives, Mushrooms, Crumbled Tofu

Vegan Cheese (for 4 Pizzas)
Cook in pot over medium heat till thickens and bubbles
while whisking in 5c water:
1.25c Nutritional Yeast
1c Corn Starch
1/2c Flour
1/2T Salt
1/2T Garlic Pwdr

Add more water to thin and:
1c Oil
1T Mustard (wet)

Use immediately or heat again when ready to use.



 TOFU BURGERS
Oven Temp: 375
Baking Time: 30 min
Bake in: Oiled uncovered shallow steam table pans
Prep Time: 1 hour
Quantity & Type: 6 pans: Onion; 1 pan: No Onion
(and +16# Ground Beef)

Saute: 2 qts each grated Carrots, diced Peppers, or pureed leftover veggies
Mix in hobart mixer with:
15# (1 bulk pkg) of well drained firm tofu
7C Bread Crumbs (use buffalo chopper)
7T Basil
5T Marjoram
5T Wet Mustard
6T Lemon Juice
1C Soy Sauce
1/2T Salt
1t Pepper
12oz Tahini

Saute 2-3 qts onions: Mix in after No Onion burgers have been made.

BUNS (for Burgers)
Oven Temp: 375
Baking Time: 15 mins
Bake in: Oiled large trays
Prep Time: 1 hour
Quantity & Type: 100 buns

Warm 18C Soymilk; Add to:
2 C Oil
2 C Sugar
½ C Yeast

Mix in 12C WW Flour; Wait 10 mins.
Mix in 1-2T salt; Add (all white) flour (24C?)
Form into small buns, half the size of a CD, Do not flatten.


LENTIL BURGERS
Prep Time: 1 hour
Quantity & Type: 72 burgers (including 6? no onion)
Cook for at least half an hour w/just enough water to cover:
9C Lentils & 1/8C Garlic
Add remaining items and cook for a couple more minutes:
6C Bulgur
1/2C Oil
1T Salt
1/8C Paprika
Fresh Parsley
Go very easy on adding water. If necessary, add flour to thicken.
Let cool (in sink). After making no onion burgers,
Add 3 large sauteed Onions. Fry or bake.


PIE
Oven Temp: 400
Baking Time: 30-40 mins
Bake in: shallow steam table pan or larger (recipe x2)
Prep Time: 1-2 hrs

Crust: Use Quiche recipe
Filling: 5+ #  Fruit (apple, rhubarb, peach)
